The amateur cooks are given one hour to recreate their signature dish for the first of the two judges' auditions. The judges introduce the nine past winners of the program, who are there to cheer them on.

Each hopeful cook has 60 minutes to produce their dish. If the judges like the dish, they're through to the next stage. If not, sadly, they're heading home.

Josh Niland of The Fish Butchery breaks down a kingfish for each of the contestants to choose a cut to cook with. The contestant with the least impressive dish will be going home.

Immunity Challenge: The Hottest Chillies of the World
The contestants must cook a dish using some of the hottest chillies in the world. The dish that best highlights the heat and flavour of their chilli will win immunity.

Immunity Challenge: Time vs Ingredients
The first immunity challenge and it's a battle of Time Vs Ingredients. Five contestants must choose between one ingredient and a 90-minute cook, OR up to 20 ingredients but only 45-minutes to cook.

Gordon Ramsay's Team Service Challenge
It's back to win and 23 returning contestants are back for another shot at the trophy. Gordon Ramsay greets them to announce that they are splitting into three teams and taking on a service challenge!

Auditions, Day 1: Your Dream on a Plate
MasterChef Australia returns with auditions and 40 of the country's best home cooks are ready. Tonight 20 cooks have 90 minutes to cook their dream dish in order to win one of the 10 aprons on offer.

To kick off Masters Week, industry icon Josh Niland gives a fish butchery masterclass and the contestants must use one of his signature butchery techniques to prepare flathead in 75 minutes.
